Our First Homemade Pies
Before this weekend, my husband and I had never baked a pie. It’s always been on my bucket list. So my friend taught us how to make our own mini pies from scratch. One’s already completely gone and we’re slowly savoring the last one.
We started by cutting the dough my friend had made the night before into four quadrants, two for each mini pie. We rolled one section out at a time, leaving the rest in the fridge.
We continued alternating between working with the dough and refridgerating as much as possible to keep them cool. We set the dough for the pie crust bottoms first. For the tops, we cut a range of thin strips and braided them into individual strands.
Next, we sliced some fresh peaches we picked up from the farmer’s market and mixed in a little sugar, lemon zest and cinnamon.
When ready, we filled our pies with the filling and started layering on the braided weave crust.
After trimming to size and brushing with a little egg on top, we baked our pies at 350F.
We found the cooking time tended to vary by pie container. The little ceramic one I had took a little longer. After setting to cool for about two hours, we celebrated with mini slices of pie and tea that evening.
