Simple Strawberry Galette Mornings
I’ve been having trouble sleeping in lately. So one morning, I found myself in the kitchen starting to bake a simple strawberry galette before the workday began. It’s a pretty simple recipe in terms of ingredients and steps. I hope you enjoy it as much as we did (it was almost gone by afternoon). See recipe below.
Simple STRAWBERRY GALETTE Recipe
For the crust:
5 tbsp unsalted cold butter
1.25 cup flour
3.5oz cream cheese
1-2 tbsp ice cold water
0.25 tsp sea salt
1 tbsp granulated sugar
1 egg (for egg wash on crust later)
For the filling:
1 lb fresh strawberries
2 tbsp apricot or raspberry preserves
Steps:
Mix the flour, salt, and sugar in a large bowl.
Cut the butter into small cubes and mix in until dough is crumbly.
Add in the cream cheese and combine.
If it doesn’t stick together, add 1-2 tbsp of cold water, a little at a time.
Wrap dough ball in plastic wrap and refrigerate. An hour is best, but I tend to use it as soon as I’m done with the filling.
Slice strawberries.
Preheat oven to 400F.
Take dough out and roll until approximately 13-14” in diameter.
Layer in strawberries, leaving about 2-3” of dough edge to fold later.
Fold the dough edges towards the center and work your way around.
Brush on the egg wash onto the crust.
Bake for 40-45min.
After bake, heat up 1-2 tbsp of preserves in the microwave for about 1 min.
Brush preserves over the strawberries to get that “glazed” look.
Let cool for about an hour and serve.
