A Cozy Girls Night in with Homemade Ramen

Since my husband’s been out of town, I decided to have a girls night in catching up with Jinha. We met up after work on a weekday and pulled out ingredients from the fridge to make a mini ramen dinner together. Funny enough, it was vegetarian ramen though neither of us are vegetarian. Perhaps it was me subconsciously missing my husband because he would have enjoyed it too.

I also used a tripod for shooting photos for the first time (funny, I know) and played around with a new lens while my Zeiss Touit was out for repair. We used the natural, diffuse light from the kitchen window and had fun trying to stay absolutely still at ISO 100 and F8.0 with a 10 second timer. If you’ve ever tried that in low light before, you’ll understand it was quite the challenge. We took over a dozen photos, but this one below was one of my favorites:

Here’s a flatlay of our ramen dinner. I love making ramen noodles from scratch (see post here), but for the girl on the go, I’d recommend these fresh ramen packs from Sun Noodle at the grocery store. They come in both miso, shoyu, and tonkotsu varieties with a pack for broth as well.

Make a few soft boiled eggs, saute some bunapi and shiitake mushrooms in Braggs, add a few bits of pickled radishes, and top with a bit of seasoned seaweed with chives.

We talked late into the evening, reminiscing over funny moments and difficult times. There is a sort of joy in exchanging stories with someone who feels like family even though we’re not directly related. It’s a like balm for the weary soul.
