A Simple Gourmet Meal on Wednesday

As I’m sure many can relate, there are days when I get home from work and am craving an indulgent, gourmet meal, but am feeling rather tired. Here’s a quick pita bread pizza you can prep and bake at home in twenty minutes.

with pita bread from the grocery store. Layer on shredded mozzarella cheese, followed by a generous drizzle of olive oil and Zatar spices. Pop into the oven at 425F for 10 minutes. Eat fresh from the oven and slice into pieces if desired.

you can also add on different toppings before baking. We used some leftover Maitake mushrooms sauteed in butter. Sprinkle on a little freshly cut chives or thyme after baking. Arugula would also go well.

On the side, we cut up some sweet cherry tomatoes and sauteed some balsamic cremini mushrooms. Follow the link to the recipe, which also takes less than 20 minutes and tastes oh so good.
