Mini Banana Bread Mornings
One of the things I’ve learned about myself over the years is that I need a little bit of spontaneity every day. It breaks up the routine of days with something special. More recently, it was making mini bundt banana bread at 10pm and having it for breakfast the next morning.
Check out below for the recipe. For the bundt definition - a trick I learned from other bakers is to butter the pan right before you bake so that it doesn’t pool at the bottom. Then, lightly dust the surface with flour, avoiding clumps. Immediately after, pour in your batter.

I bought the Nordic Ware 70th Anniversary Cakelet Plaque from Williams Sonoma some years ago and love it. With this recipe, you can make ~11 bundt cakelets.
