Weeknight Dinner in with My Husband
We’ve both been rather tired this week, but my husband’s cousin Wesley made our day by dropping off a homemade loaf of bread! It was so round!
Given how much I love round objects, it was against every fiber of my being to cut this up. Thankfully, my husband helped slice it into a few thin pieces. We bagged up the rest of the uncut loaf for another day.
We decided to make a quick dinner and stay in for the night. We tried a few different variations of toppings: onion chèvre with fresh thyme leaves and almonds, fresh burrata with cherry tomatoes and homemade vinaigrette, olive caper tapenade with chèvre spread. We also tried avocado with tapenade, fresh thyme and almonds.
We surprisingly got full after just a few shared slices. So tasty! I’d highly recommend trying this at home. The bread of course was amazing. Thank you Wesley!
