Apple Pie Kind of Weather

One of my favorite things to do is to cook a meal with local ingredients wherever I’m traveling. We bought some local apples and baked apple pie late into the night, while catching up with friends until the early hours. We let it cool overnight and woke up to an apple pie breakfast under the protected balcony of our cabin.

I learned from my friend Apoorva to handle the dough as quickly as possible before the butter started melting. We formed the bottom crust first, followed by cutting thin strips and forming the pie crust weave. I found some good tips from Linda Lomelino, who makes some beautiful pastries. If you place the crust and and weave in the freezer prior to baking, there’s a better chance the crust will hold its shape.

After our apple pie breakfast, we took off in search of nature and more beautiful, fall foliage to fill our day.
