How We Breakfast

On slower mornings, I like to stay in pajamas and head over to the kitchen to make breakfast. It’s one of my favorite meals of the day where you don’t have to be fully awake or alert yet. 

We don't usually plan out our breakfasts, but we often like eating eggs sunny side up with some veggie breakfast patties. I actually prefer the vegetarian breakfast patties over the meat ones because they're quite tasty without all the extra oil. It's easy to heat them up over a pan or bake them briefly in the oven.

For eggs, my husband bought us a mini non-stick pan. I like to add a little oil to the pan and crack one or two eggs into the pan at a time. I'll sprinkle on some salt, pepper, and peel off some thyme sprigs. Then keep the heat at medium with the lid capped for a few minutes, checking occasionally in between.

Since eggs and sausage patties tend to be heavier, I like to pair with some fresh vegetables such as tomatoes or these French radishes we found at a local market. We first discovered these radishes while we were in Provence. Believe it or not, they're actually sweet!
