A Relaxing Apple Galette Afternoon

For the first time in a long while, we had a warm sunny day that almost felt like spring. The air was soft and fresh. And the weekend had just started.

I put on some calm piano solos and found myself starting to make an apple galette. In between, we left the kitchen door open and soaked up some sunshine on our deck while the aroma of apple galette wafted outside.

It all started with a little ball of dough. I followed this galette dough recipe from Linda Lomelino’s pie book here. Her addition of cream cheese helps make the dough softer than the traditional pie crust. I let this rest in the fridge for about an hour.

Meanwhile, I started on the filling, following a recipe here from Once Upon a Chef. I used our extra Envy apples that were beginning to over ripen.

After finishing the last pleats, some egg wash and a dusting of sugar, I let this rest in the freezer for about 15 min before baking.

Here’s some behind the scenes of my final photo setup after the bake. I kept chasing the light from our kitchen windows as the sun began setting.
